Terroir: tableland on the mountainside of Parco Nazionale del Gargano. 180 m.a.s.l.
Grapes: Fiano 50% and Greco 50%

Viticulture: our way to make a fruitful land is the creation of the best sinergy
between the grape and my rich and stony land, helping the vines to reach the
mineral nutrients deep in the garganic rock which gives wines strenght and
minerality. We use sulfur, copper, biodynamic preparations and sexual pheromone
traps to avoid seasonal diseases.
Harvest: manual, between the end of August and beginning of September.
Alcohol: 12% vol
Vinification: in order to obtain a qualitatively superior must, the grapes is crushed
as a whole to protect all the aromatic components of the berry. The must ferments
spontaneously in steel tank thanks to the yeast on the skins. It refines on its own
lees for at least three months. Grape must and wine decant naturally without any
fining agent. No sterile filtration is used. A minimum addition of suplhites is done
before bottling.
Total sulphites: 44 mg/l
Tasting notes: straw yellow colour, floral and citrus fruits where the scents of Fiano
merry the body of Greco and the mineral flavor from the soil.
Matches: appetizers, grill and fish dishes
Served: cool, at 10-12°C
